Sarciadong Isda Recipe (Fish with Tomato and Egg Sauce)

Sarciadong Isda is a popular Filipino dish made with fried fish simmered in a savory tomato-based sauce and topped with beaten eggs. It’s a comforting and flavorful ulam (main dish) that pairs perfectly with steamed rice. This recipe is easy to follow and uses simple ingredients you likely already have at home.


Ingredients:

  • 2-3 pcs tilapia, bangus (milkfish), or galunggong (round scad), cleaned and fried (For this recipe, I used a Pompano fish.)
  • 3 medium tomatoes, chopped
  • 1 ginger sliced into thin strips
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 1 cup water or fish broth
  • 2 tbsp fish sauce (patis) or to taste
  • 1 tsp ground black pepper
  • 2 tbsp cooking oil
  • Chopped green onions or parsley (optional, for garnish)
  • For this recipe, I added Tokwa squares. ( Tokwa is a Filipino term for Tofu. the difference is Tokwa is typically denser and has less moisture than regular tofu. It's a lot firmer than the regular firm Tofu. but you can use any firm Tofu. just fry it first. )

Instructions:

  1. Prepare the fish:
    Clean and pat dry your fish. Fry in hot oil until golden brown on both sides. Set aside and drain on paper towels.

  2. Sauté the aromatics:
    In a pan, heat 2 tbsp of oil. Sauté garlic until fragrant, then add onions and tomatoes. Cook until the tomatoes are soft and the mixture becomes saucy.

    3. Add liquid and seasoning:

    Pour in water or broth. Add fish sauce and ground black pepper. Let it simmer for 2-3 minutes to combine flavors.

    4. Add the fried fish/Tokwa

    Gently place the fried fish and Tokwa squares into the sauce. Let it simmer for about 5 minutes so the fish and the Tokwa absorbs the flavor.

    5. Pour in the eggs:

    While the sauce is gently simmering, slowly pour the beaten eggs over the fish. Let it sit for a few seconds before stirring gently to form soft egg curds.

    6. Serve hot:

    Garnish with green onions or parsley, and serve Sarciadong Isda with hot steamed rice.

    Tips for Cooking Sarciadong Isda:

    You can use leftover fried fish for this recipe.

    Tilapia, galunggong, or bangus are commonly used, but any firm white fish works well.

    Don’t overmix the eggs to keep them soft and fluffy.

    Add a pinch of sugar if your tomatoes are too sour.
