Chicken Adobo (My version)



This is my version of the chicken adobo~💯

For this recipe, I used chicken wings. Since the chicken wings are big, I cut them in half. 

Ingredients:
Chicken wings (you can use any part of chicken of your choice)
Pepper (lots of it! )
Garlic
Onion
Fish Sauce (patis)
oyster sauce
vinegar
soysauce
cooking oil
potatoes (cubed)
Laurel leaves

1. Marinate first our chicken meat. For this recipe, I used vinegar, oystersauce and soysauce. Marinate it one hour before your cooking time. You can also marinate it the day before you want to cook it. 
2. Get the aromatics ready. In a pan, heat up the cooking oil and instead of putting the aromatics first, put the chicken first. Cook it for about 10 minutes. 
3. Next, put in your aromatics. Don't forget to put lots of pepper too. Laurel leaves are an important part of the Adobo. put in 3 pcs of leaves. put in your potatoes. 
4. Mix them and let it simmer for about a minute. Add more water to your adobo and let it cook for another 15-20 minutes. I like to boil chicken in the adobo sauce more. 
5. Taste your adobo. Add vinegar, soysauce to your liking. At this point, I like to add my oyster sauce. Make sure to mix it well and let it simmer again for another 5-10 minutes. Check the sauce level. If you want a little more adobo sauce, don't hesitate to add more once the previous one dries up and is absorbed by the chicken. 

What I like to do is, Once the chicken is cooked. Get the sauce in the separate bowl until there is only little left. On the separate bowl, add a little more soysauce, vinegar and oystersauce to your liking. 
On the pan, the chicken will cook and release some more oil, and once you see it, put it on the bowl where your sauce is. 

Basically what I am trying to here is cooked the chicken more while saving the sauce.
