Ingredients

2 cups elbow macaroni ( up to you to adjust the measurement, depends on how many people will eat. 😊)

1 lb chicken breast or thigh, shredded (you can use pork too. 😉)

1 medium onion, chopped

3 cloves garlic, minced


1 cup chopped carrots

1 cup shredded cabbage

1 cup hotdogs or sausage slices (optional)

Salt and pepper to taste

1 tbsp cooking oil

4 cups chicken broth or water 

*Aside from salt and pepper, I also use Patis (fish sauce) about 1-2 tsp while I sauté the onions and garlic. I rarely use salt because the fish sauce is better! (but this is my preference. )


Instructions

1. Cook the Macaroni: Boil elbow macaroni until al dente. Drain and set aside.


2. Prepare the Chicken: Boil chicken until cooked through. Shred and reserve the broth.


3. Sauté Aromatics: In a large pot, heat oil. Sauté garlic and onion until fragrant. On this part, You can add fish sauce. I use 1 tsp here. 

*Instead of using an ordinary oil, You can use butter too. 


4. Toss in the carrots- You can put a little water or chicken broth to cook the carrots first, Then add the shredded chicken. Add 1-2 tsp of fish sauce and mix. After 5 mins, toss in the shredded cabbage. To cook the cabbage, put water or chicken broth. mix everything. Then after another 5 minutes, put in the chicken broth. Let it simmer.  

6. Make it Creamy: Stir in evaporated milk and cooked macaroni. Simmer for another 3–5 minutes.


7. Season and Serve: Add salt and pepper to taste. Serve hot with bread or crackers.

*I eat it with rice! LOL


Tips for the Best Sopas

Use evaporated milk for a rich, creamy texture.

Add butter for extra flavor. Actually, instead of using an ordinary cooking oil, You can use butter. 

For a healthier version, use lean chicken and add more vegetables like celery or spinach.
